Simple Strawberry Pulp Mousse

It always seems like a waste to throw away the pulp after making fresh fruit juices, but there are many ways that the pulp can be used. Strawberry pulp, for example can be used to make a delicious strawberry pulp mousse. The ingredients that I used for this recipe are very simple and it only takes a few minutes to make the treat.

The only downfall about this raw mousse recipe is that the pulp contains a lot of small seeds. Nonetheless, with the coconut and maca flavors it is a delicious treat that you can serve up for dessert or enjoy it as an afternoon snack.

Instead of the strawberry pulp, you can also use whole strawberries to make the mousse. Just remember that the strawberries contain juice, which means that you will have to ease up on the nut milk in order to keep a nice consistency. Asparagus and Green Beans

Asparagus is always best when it is fresh and in season. So I have been having my share of it this season to last me for the rest of the year. And although I am a huge fan of the raw food diet, I have not tried raw asparagus yet. Perhaps in the future I might advance to that stage, but for now I will continue to enjoy lightly steamed asparagus.

One of my favorite and easiest ways to prepare the asparagus is to lightly steam it and dress it with olive oil and a sprinkle it with unrefined sea salt. Sometimes I also like to add a bit of Parmesan cheese, even though it is a processed food. I try to stay away from the processed stuff, but I still cave once in a while.

But today, I decided to try something else after stumbling upon a recipe for asparagus and green beans with citrus/garlic oil. The recipe calls for the zest and juice of a clementine to add more flavor to the dressing. I did not have a clementine, so I used about half of an orange and I admit, I like the extra zest.

Besides the great taste, the recipe is fast and easy to make and can be served as a main meal or as a side dish. I eat very plain, so I enjoyed is as my main meal.

The Root of My Health Problems

Okay, so I acknowledge that I have failed in keeping my food diary. But I had several reasons why I stopped. First, I think that it is rather mundane for me to keep track of all the food I eat, because my diet is so plain. Second, I came down with the cold, for the first time in like three years.

The good news however, is that I finally figured out the root of ALL my health problems that have plagued me my whole life. I have gone to doctors so many times as a child and even in my adult years, but they could never find out what was wrong with me. So for the last four years I finally took matters into my own hands and did my own research. And I am proud to say that I finally found the root of the problem.

At first I thought I had fibromyalgia, which I probably did because my muscles were so sore all the time, and I had all the other symptoms that accompany the horrible disease. Those symptoms had begun to die down because I have not done any physical work for almost three years now. Because of that I thought I was getting better, but I still had no energy! And now I know why...

So are you ready? Here I go....I discovered that I was massively infected with parasites. Not only in my intestines, but in my lungs, my head and I swear in the rest of my body too. I could literally feel them come out of my head. YUCK!! I still have not gotten rid of them all, but I am starting to feel my energy levels return.

So what did I do to get rid of them? GARLIC. The one food that people have been telling me about, as to how good it is for you, and the one food that I have rejected this whole time. I have never in my whole entire life enjoyed spicy foods, but now I have made a promise to myself that spice is what my diet will be from now on.

At first when I started to take the garlic I mixed it with olive oil, lemon juice and a few spices, but it got so disgusting that I couldn't down it anymore. Then I tried it with coconut oil, which was a little different, but not much better. Then I got smart and came up with my own recipe, and to be honest I really don't mind it at all. What I do now is chop up the garlic, and mix it with avocado, lemon juice, sea salt, turmeric, cayenne pepper and black pepper. You can get the parasite killer recipe here. I will definitely keep you posted on whether or not I am able to get rid of the parasites with diet alone, or if I will have to get a parasite cleansing kit. Hopefully a diet alone will do it for me.

Bean Dip with Avocados, Tomatoes and Cilantro

Well I decided to treat myself again today. I made a bean dip with avocados, tomatoes, cilantro and a few other ingredient. (I will post the recipe soon) I served it for lunch with home-made tortilla chips. It was very good, but I saved some for tomorrow.

For breakfast I had 2 apples again. They are so cheap to purchase at this time of year, that I cannot help but eat them everyday.

And for supper I am enjoying a few superfood smoothies again, one made with acai berry powder, and the other with cacao, maca and ashwaganda. It really is amazing at how much the superfoods fill you up...I could like totally live on these foods...and nothing else. Perhaps I will try it one day.

Nothing New Today...

So I did not make anything new today. I finished the guacamole pomango for lunch today, and it was still just as good as it was yesterday. For breakfast I had my 2 apples, and for supper I had a smoothie with acai powder, flax seeds and a banana. (It was very good) The recipe is coming....

For drinks I had lemon water and acai powdered drinks. I may not have eaten that much, but right now, I still feel very full.

Guacamole and Homemade Tortilla Chips

Today I made this really awesome guacamole called "Guacamole Pomango". It was sooo good I could not help but overeat on it. I made some home-made tortilla chips to go with the recipe, and both were delicious.

The Guacamole Pomango recipe calls for the usual guacamole ingredients except for tomatoes. Then, it calls for pomegranate seeds and a mango to add some sweetness. So its like a sweet and sour guacamole, which I really like.

My Substitutions:

  • I could not find a the pepper that the recipe calls for, and so I substituted half of a jalapeƱo pepper. (I do not like things too spicy).
  • And because I love cilantro I added a bit  more than what the recipe called for. 
  • I bought the mango, and it looked like it was of a good quality; but when I peeled it, it had these dark spots on the inside, and so I discarded it. I did not feel like returning to the store to get another one, and so I made it without the mango. :( Despite of that, the recipe was still great.

My Diet:

  • For breakfast I had my 2 apples, with sea salt sprinkled on top of the slices. 
  • For lunch I had 2 bananas.
  • And for supper....need I explain? (I did not eat all the chips or guacamole, but I had plenty).
  • For my drinks today, I had a few superfood smoothies made with raw cacao, maca and acai powder. I also had a few cups of lemon water.

Simple Diet

In case you have not noticed, I am on a very simple diet. The majority of my meals are very simple, and every once in a while I treat myself to the real meal, or a variety of different flavors.

So on today's menu...

Breakfast: 2 apples, cut up with sea salt sprinkled onto them

Lunch: Another romaine lettuce salad with avocado, lemon and sea salt dressing, topped with toasted sunflower seeds.

Supper: I made a smoothie with acai powder, a banana, nut milk and honey. ( I have the recipe for this, but I need to post it).

Drinks: I had a few cups of lemon water with honey, and for the rest of the day I had superfood smoothies with cacao, acai, maca, ashwaghanda and coconut oil. (these recipes are also coming soon...)

Snacks: Sunflower seeds...can you tell I really enjoy them? :)
